Whole Roasted Branzino in Banana Leaf

Ingredients:

  • 2 oz. oil
  • ½ oz. coriander seed
  • 2 pc. cardamom
  • 1 oz. mustard seed
  • 4 oz. shallots, large rings
  • ½ oz. garlic, minced
  • ½ oz. ginger, minced
  • 2 tomatoes, cubed
  • ½ cup fish sauce
  • ¼ oz. turmeric
  • 4 pc. dried chilies
  • 2 oz. sugar
  • 2 oz. lime juice
  • 2 oz. scallion greens, sliced
  • 1 banana leaf
  • 6 pc. mooshu pancakes

Directions:

  1. Toast and grind the coriander, cardamom.
  2. In a rondeau, toast the spice mixture and the mustard seeds in the oil.
  3. When the mustard seeds begin to pop add the shallots, garlic, and ginger and sweat out.
  4. Add the fish sauce, turmeric, dried chilies and sugar.
  5. Add the tomatoes and cook until they start to breakdown.
  6. Finish with lime juice and cool. Once cooled, fold in scallion greens.
  7. Let cool and take banana leaf and take 3 oz. of tomato jam, then place fish on top of that and cover with 4 more oz. of tomato jam.
  8. Roast in a 350 degree oven for 20-30 minutes.
  9. Open and cover with basil, cilantro, dill and serve with steamed mooshu pancakes.
