Vanilla Cupcakes With Buttercream Icing

This basic cupcake recipe is delicious and always a crowd-pleaser. Use fun baking cups and color the buttercream icing to take the cupcakes up a notch.

Makes about 24 Cupcakes

Cupcakes Ingredients:

  • 3 cups sifted cake flour
  • 2-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2/3 cup butter or margarine, softened
  • 1-3/4 cups granulated sugar
  • 2 eggs
  • 1-1/2 teaspoons vanilla extract
  • 1-1/4 cups milk

Buttercream Ingredients:

  • 1/2 cup solid vegetable shortening
  • 1/2 cup (1 stick) butter, softened
  • 1 teaspoon Wilton Imitation Clear Vanilla Extract
  • 4 cups sifted confectioners’ sugar (about 1 lb.)
  • 2 tablespoons milk
  • Wilton Icing Color and Sprinkles, optional
     

Directions:

  1. Preheat oven to 350ºF. Line muffin pan with baking cups.
  2. In large bowl, combine flour, baking powder and salt; set aside.
  3. In second large bowl, beat butter and sugar with electric mixer until light and fluffy.
  4. Add eggs and vanilla; mix well.
  5. Add flour mixture alternately with milk, beating well after each addition.
  6. Continue beating one minute.
  7. Pour into prepared cups.
  8. Bake 18-20 minutes or until toothpick inserted in center of cupcake comes out clean.
  9. Cool cupcakes in pan on cooling grid 5 minutes.
  10. Remove from pan; cool completely.
  11. For icing, beat shortening and butter in large bowl with electric mixer.
  12. Add vanilla.
  13. Gradually add sugar, one cup at a time, beating well on medium speed.
  14. Scrape sides and bottom of bowl often.
  15. When all sugar has been mixed in, icing will appear dry.
  16. Add milk and beat at medium speed until light and fluffy.
  17. Add icing color and beat until well combined.
  18. To assemble, ice cupcakes with buttercream icing and sprinkles.
