Torta di Vermicelli - Pasta Cake

Like magic, this fascinating recipe turns half a pound of thin vermicelli or angel hair pasta into a dense, moist cake. At first glance it may look like a noodle pudding recipe, but it’s not! Unlike noodles, when thin pasta bakes, it melds into a lush mass of creamy sweetness. The Baci candies add a nice touch of chocolate and nuts to every slice.
Ingredients:
  • 2 cups whole milk
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 8 ounces angel hair pasta
  • Butter and flour for the pan
  • 4 eggs
  • 1/2 cup golden raisins or dried cherries
  • 16 Baci chocolate candies
  • Confectioners’ sugar
Directions:
  1. Bring the milk, sugar and salt to a boil then add the pasta and cook until al dente. Let cool to room temperature.
  2. Preheat the oven to 350 degrees. Lightly butter a 9-inch non-stick spring-form cake pan and dust with flour.
  3. In a large bowl, beat the eggs until frothy then stir in the raisins and pasta until well combined. Pour the mixture into the prepared pan. Press Baci candies into the pasta, and bake, uncovered, for about 35 minutes, until the edges are golden and the center is set.
  4. Serve at room temperature topped with confectioners’ sugar.
