The Motherlode Pizza

Makes 2 pizza (12 inches)

Ingredients:

Pizza Dough:

  • 1 packet (¼ oz.) active dry yeast
  • ¾ cup warm water
  • 2 ½ cups all-purpose flour
  • 1 tsp. salt
  • 1 tbsp. olive oil

Sauce:

  • 1 can (28 oz) whole Italian tomatoes
  • 1 tbsp. hot sauce
  • 2 tbsp. olive oil
  • ¼ cup fresh Parmesan cheese, grated
  • 1 pinch dried oregano
  • 1 tsp. fennel seeds
  • 1 small spoonful anchovy paste or 1 anchovy fillet, finely chopped
  • 1 tbsp. capers, chopped

Toppings:

  • Cheese of your choice (mozzarella, mozzarella di bufala, goat cheese, provolone, etc.)
  • And any combination of:
  • Meat (pepperoni, sausage, prosciutto, capicola, etc.)
  • Seafood (shrimp, scallops, calamari, etc.)
  • Vegetables (marinated artichoke hearts, onions, spinach, etc.)
Directions:
  1. Spread 1 1/2 tbsp of cream cheese on wrap. 
  2. To make the pizza dough, combine yeast and warm water. Let sit for 10 minutes and then mix together with 1 cup flour and the salt.
  3. Knead dough for 5 minutes, and then cover with a damp tea towel and let rest for 30 minutes.
  4. Add remaining flour and olive oil and knead for another 5 minutes.
  5. Cover again with the damp tea towel and let rest for 1 hour and 30 minutes at room temperature.
  6. Meanwhile, prepare sauce by draining tomatoes over a bowl using a wire mesh sieve.
  7. Use a knife to cut the tomatoes in order to drain all of the liquid, so that you’re left with just the tomato flesh.
  8. Put tomatoes into a bowl and add hot sauce, olive oil, Parmesan cheese, oregano, fennel seeds, anchovy paste, and capers.
  9. Mix well and set aside.
  10. To assemble pizzas, preheat oven to 450°F (230°C).
  11. Divide dough in two.
  12. Flour a work surface and, using a rolling pin, roll out one ball of dough into a 12-inch circle.
  13. Spread half the tomato sauce over crust and top with cheese.
  14. Spread toppings evenly over cheese and then transfer to a pizza stone (or a pizza pan or a baking sheet).
  15. Cook for around 10 minutes, or until cheese is melted and crust is crisp and golden. 
  16. Repeat process to create 2nd pie.
