Southern Corn Black Bean Salad

Serves 4-6 people

By Chef Tim Doherty Pitmaster at Bobby Q’s family of restaurants in Connecticut (Bobby Q’s Bodacious BBQ & Grill in Westport; Bar Q BBQ Saloon in Stamford and Bobby Q’s Pit Stop in Greenwich).

Ingredients:

  • 2x 12oz cans black beans, drained and rinsed
  • 1 cup fresh corn
  • ½ of a red onion, finely diced
  • ¼ cup olive oil
  • 1 small bunch of cilantro, finely chopped
  • Juice of 2 limes
  • Salt & Pepper to taste

Directions:

  1. Mix all ingredients together – taste for seasoning.
