Stir-fried Sugar Snap Peas With Tapioca

Ingredients
  • Water 1 cup
  • Soy Sauce ¼ cup
  • Tapioca ¼ cup
  • Sesame Oil 1 tsp
Directions
  1. Bring the water and soy sauce to the boil.  Whisk in the tapioca and cook until tender.  Cool quickly over an ice bath and stir in the sesame oil.  Do not refrigerate.
For The Plate
  • Sugar Snap Peas, blanched 2 cups
  • Water Chestnuts, quartered ¼ cup
  • Shitake Mushrooms, quartered ¼ cup
  • Small Black Fungus, soaked ¼ cup
  • Ginger, minced  2 tsp
  • Red Finger Chili, sliced 1 tsp           
  • Pea Shoots ¼ cup
Directions
  1. Bring the water and soy saSweat the ginger in oil in the wok.  Add the mushrooms.  Add the peas, water chestnuts and chili and stir fry.  Turn off the heat and toss in the soy tapioca.  Garnish with pea shoots.  uce to the boil.  Whisk in the tapioca and cook until tender.  Cool quickly over an ice bath and stir in the sesame oil.  Do not refrigerate.
