S'more Pots De Creme

Chocolate Pudding Custard
Ingredients:
  • 1725g Heavy cream
  • 500g Sugar
  • 1 ½ c cocoa powder
  • 33g 70% chocolate
  • 8 Gelatin sheets bloomed
Directions:
  1. Bring milk and sugar to a boil
  2. Whisk in cocoa and chocolate until combine
  3. Whisk in gelatin sheets
  4. Pass through chinoise
Marshmallow Cream fluff
Ingredients:
  • 2c sugar
  • 2c egg whites
  • 2 vanilla beans
Directions:
  • Comine all in a mixing bowl
  • Whisk over double boil until bath water warm and all sugar has dissolved
  • Remove from heat and whisk until very soft peak

Graham Cracker Crust

Ingredients:
  • 500grams Soft unsalted butter
  • 208grams Sugar
  • 590grams Graham cracker crumbs
Directions:
  1. Combine all ingredients and bake at 325 F for 9 minutes
