Simple Shrimp Ceviche

Ingredients:

  • 1 pound medium shrimp, peeled and deveined
  • 4 limes, juiced
  • 4 lemons, juiced
  • 1 orange, juiced
  • 2 large tomatoes, diced small
  • 1 red onion, diced small
  • 2 celery ribs; diced small
  • 1 jalapeno pepper;  seeded and finely chopped
  • 1 avocado, peeled, seeded, and diced small
  • 1 bunch cilantro, stemmed and roughly chopped
  • Salt

Directions:

  1. Place shrimp in a bowl and cover with citrus juices. Set aside and let cook for 5-10 minutes or until they turn pink.
  2. Combine tomatoes, onion, celery and jalapeno in mixing bowl.
  3. Remove shrimp from juice (reserve the juice), dice and add to veggie mixture.
  4. Pour in half of reserved juice (discard the rest).
  5. Add cilantro, avocado and salt. Toss gently to combine.
