Seared Tuna with Shallots, Asparagus and White Wine Butter Sauce

Try this pan-seared tuna with shallots and asparagus in a white wine butter sauce.
Ingredients
  • One 4 oz yellow fin tuna
  • 2 tablespoons olive oil
  • 1 teaspoon diced shallot
  • 1/4 cup blanched asparagus tips
  • 1 teaspoon capers
  • 1/4 cup white wine
  • 1 pinch fresh thyme
  • 1 tablespoon butter
  • Cracked black pepper
  • Kosher salt
Method
  1. In hot saute pan with a little oil, sear both sides of tuna on high heat for 1 minute per side. After getting a nice golden brown crust, take fish out of pan to rest.
  2. In same pan add shallots, cook until translucent, and then add blanched asparagus tips and capers.
  3. Deglaze with white wine.
  4. Finish with butter, fresh thyme, salt and pepper.
