Seared Scallop with Spicy Pork Sausage, Green Beans, Parsley & Baby Arugula

Ingredients:

  • 6 medium sized sea scallop
  • 2 links of spicy pork sausage *
  • 1 cup cooked green beans
  • 8 baby yellow tomatoes
  • 1 cup picked parsley
  • 2 cups baby arugula
  • ¼ cup good quality red wine vinegar
  • 2 tablespoon blended oil

Directions:

  1. Place a large sauté pan over high heat
  2. Season the scallops with ground black pepper and sea salt
  3. Once the pan is hot add the oil and place the scallops in gently (place scallops in the pan away from you so you don’t splash yourself with hot oil!)
  4. Once in the pan try not to move the scallops around so they will cook evenly to golden brown. After 1-2 minutes the scallops should be golden brown on one side-flip and continue to cook on the other side for around 1-2 minutes.
  5. Once cooked remove from pan and place on plates
  6. Keep the pan on the heat and add the sliced pork sausage, cook for 2 minutes then add the yellow tomatoes, green beans and parsley
  7. Add the red wine vinegar and add the baby arugula.
  8. Give the pan a quick toss and evenly place the warm pork and green bean mixture over the scallops.
