Scallops-Chorizo Toast

Ingredients
  • 5 ea.  Slices of white bread
  • ½  lb. Scallops
  • ¼ lb.  Chorizo sausage, skin removed
  • 4 ea.  Water chestnuts (can substitute jicama)
  • ½ ea. Tomato, finely chopped
  • 2 ea.  Scallions, thinly sliced
  • 1 Tbl. Grated ginger
  • 1 Tbl. Rice vinegar
  • 1 ea.  Egg, beaten
  • 2 Tbl. Cornstarch
  • 1 .5 Tbl. Sambal paste (to taste), Salt and pepper to taste, Black and white sesame seeds to sprinkle on top
Method
  1. Combine seafood and other ingredients and put on top of the toast.  Place on a Vegalene-sprayed sheet pan in a 350-degree oven for 25 minutes.
