Roasted Skuna Bay Salmon

Dish Ingredients:

  • 6 oz Salmon
  • 1 cup Honey-Rhubarb Broth
  • ¼ cup Honey
  • 1 Tsp Olive Oil
  • 2 tsp Salt
  • 1 bnch Peas Shoots

Honey-Rhubarb Broth Ingredients

  • 1 cup Rhubarb juice
  • ¼ cup Honey
  • 1 Tsp Olive Oil
  • 1 tsp White Soy

Preparation:

  1. Reduce rhubarb juice by 1/3 over low heat. Strain through coffee filter.
  2. Whisk in honey and and white soy.

Assembly:

  1. Preheat a medium non-stick pan with vegetable oil. Season the salmon portion with salt and place into pan skin side down. Render skin on medium heat 2-3 minutes.
  2. Place in a 350 degree oven for an additional 2-3 minutes.
  3. To serve pour broth around the salmon and garnish with pea shoots.
