Roasted Pumpkin Pancakes

Serves: 6
Ingredients
  • 2 cups all-purpose flour
  • 2 tbsp each brown sugar
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1-1/2 cups milk
  • 3/4 cup canned pumpkin
  • 1 Eggland’s Best egg lightly beaten
  • 2 tbsp olive oil
Method
  1. In the oven cook the pumpkin at 375 for about 15 minutes, let cool down
  2. In a large bowl, combine the dry ingredients
  3. In a small bowl, combine the milk, pumpkin, egg and oil; stir into dry ingredients just until moistened
  4. Pour batter by 1/4 cupfuls onto a non stick pan coated with cooking spray
  5. Turn when bubbles form on top. Cook until second side is golden brown
