Roasted Asparagus

Ingredients:
  • 1 pound fresh asparagus; cleaned & trimmed
  • 1 tablespoon rice vinegar
  • 2 teaspoons dried thyme leaves
  • 1 teaspoons olive oil
  • 1/4 teaspoon coarse salt
  • Freshly ground black pepper; to taste 
Directions:
  1. Preheat oven to 375º.
  2. Place asparagus in a large ziplock bag.
  3. Combine vinegar, thyme & oil in bowl & whisk thoroughly.
  4. Pour into bag with asparagus and let marinade for at least 15 minutes.
  5. Remove asparagus from bag and place in an even layer on baking sheet(s).
  6. Bake about 10 minutes until crisp/tender; shaking pan halfway through.
  7. Remove from oven, sprinkle kosher salt & pepper to taste
  8. Serve immediately
