Roasted Delicata Squash

Ingredients:

  • 2 delicata squash, halved, seeded and sliced
  • 2 tbsp olive oil
  • 1 tbsp fresh thyme
  • 1 tbsp maple syrup
  • 1 tbsp white balsamic vinegar
  • 2 tbsp sunflower seeds
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 400.
  2. Combine oil with thyme, maple and balsamic.
  3. Toss with delicata squash. Season with salt and pepper. 
  4. Arrange the squash, in a single layer, on a baking sheet. Bake for 10 minutes.
  5. Flip the squash pieces and bake another 10 minutes or until tender.
  6. Serve sprinkled with sunflower seeds.
