Red Velvet with Cream Cheese Frosting

Ingredients:
  • 2 1/4 Cups of sifted cake flour (sifted then measured)
  • 3 Tablespoons unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 Cup buttermilk
  • 2 Tablespoons red food coloring
  • 1 teaspoon distilled white vinegar
  • 2 teaspoons vanilla
  • 1 1/2 Cups sugar
  • 2 sticks of unsalted butter (room temperature)
  • 1/4 Cup canola oil
  • 2 Large eggs
Directions:
  1. Preheat oven to 350 degrees F 
  2. Butter and flour 2 - 9 inch baking pans
  3. Sift flour, cocoa, baking powder, baking soda,and salt together and set aside
  4. In a separate bowl whisk buttermilk, food coloring, vinegar, vanilla and oil, set a side
  5. In a large bowl beat butter and sugar then add eggs one at a time beating well after each addition.
  6. Beat in dry ingredients alternating with wet ingredients. 4 dry 3 wet (scrape sides of the mixing bowl after each addition)
  7. Bake on middle rack of oven 27 mins.
Frosting Ingredients:
  • 2-8oz. packages cream cheese at room temperature
  • 1 stick unsalted butter
  • 1 Tablespoon vanilla
  • 2 1/2 Cups confectioners sugar
Directions:
  1. Whip cream cheese and butter together until well blended and smooth
  2. Mix in vanilla
  3. Add confectioners sugar gradually and whip until smooth
  4. Refrigerate until cake is completely cooled and ready to be frosted
  5. Serve and Enjoy with Family and Friends
