Quinoa Chocolate Cake

Ingredients:

  • Cooking oil spray
  • 2 cups cooked quinoa
  • 1 cup agave nectar
  • 1/2 cup plain kefir or buttermilk
  • 1/2 cup grapeseed oil
  • 3 eggs
  • 1 tablespoon plus 1 teaspoon pure vanilla extract
  • 1 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Directions:

  1. If you don’t have cooked quinoa already available, cook the quinoa according to the instructions on the package and allow it to cool completely before proceeding.
  2. Preheat the oven to 350 degrees. Lightly coat a 9-inch springform pan with cooking oil spray.
  3. Measure the quinoa, agave nectar, kefir (or buttermilk), oil, eggs, and vanilla extract into a blender jar or bowl of a food processor, and blend or process until completely smooth. Add the remaining ingredients and blend or process just until combined.
  4. Pour the batter into the prepared pan and bake for 29 minutes, or until a toothpick inserted into the center of the cake almost comes out clean (a few moist crumbs on the toothpick are okay). Be careful not to overbake. Allow the cake to cool completely before removing the sides from the springform pan.
