Quinoa & Veggie Soup

Serves 4

Ingredients:

  • 1 cup pre cooked quinoa or dry quinoa, cook to package directions (do this when you have some extra time)
  • 1 cup frozen crinkle cut carrots
  • 1 cup frozen peas
  • 4 cups vegetable broth
  • 2 tablespoons dried parsley

Directions:

  1. Cook quinoa & set aside. In a large soup pot bring the broth to a boil.
  2. Add the frozen veggies & parsley.
  3. Bring back to a boil & cook for a few minutes.
  4. To serve: place some quinoa in a bowl, add soup on top of that.
