Quick & Easy 3 Ingredient Guacamole

Yield: 2 servings

Ingredients:

  • 1 ripe organic avocado
  • 1 teaspoon finely minced scallions
  • squeeze of lime

Directions:

  1. Cut open avocado, discarding seed. Scoop flesh into bowl and mash with back of fork.
  2. Add scallions and squeeze of lime. Mash again to combine. Enjoy immediately with eggs for breakfast, as a topping for tacos or any bean dish, or as a side with a protein (chicken, steak, etc.). Also complements quinoa and brown rice wonderfully!
