Quick Chicken & Pasta Primavera Casserole

Ingredients:

  • 2 cups part skim shredded mozzarella cheese  
  • 1/2 cup grated Parmesan cheese
  • 1 egg; lightly beaten
  • 2 cups homemade pasta sauce or low sugar/low sodium jarred sauce
  • 2 cups of your favorite cooked veggies; coarsely chopped
  • 4 cups cooked pasta
  • 3 cups cooked chicken breast; coarsely chopped
  • 1/4 cup breadcrumbs 

Directions:

  1. Preheat oven to 350°.
  2. Combine 1 cup of mozzarella, 1/4 cup of parmesan, egg and pasta sauce in large bowl.
  3. Gently stir in vegetables, pasta and chicken.
  4. Pour pasta mixture into baking dish and sprinkle with breadcrumbs.
  5.  Bake uncovered 25 minutes or until heated through.
  6. Sprinkle with remaining mozzarella and Parmesan.
  7. Bake 5 more minutes.
