2 cups prepared pumpkin bread, cubed into 1/2 inch squares
4 eggs
1/4 cup butter, melted
1/2 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla
1 teaspoon cinnamon
3 cups whole milk
Preheat oven to 350 degrees. Fill a 9x9 baking dish (greased) with both regular and pumpkin bread cubes. Toss a bit to combine. Set aside.
In a mixing bowl, combine the eggs, sugar, milk, salt, vanilla and cinnamon and whisk thoroughly until well mixed. Gradually whisk in butter.
Pour mixture over bread cubes. Press down with a spatula to allow the bread to soak up the custard mix. Allow to rest for 15 minutes before baking in a preheated 350 degree oven. Bake for 45 minutes.
