Pumpkin Whoopie Pies

Makes 16 whoopie pies

Ingredients:

  • 1 ½ cups pumpkin puree
  • 2 cups light brown sugar
  • 1 cup vegetable oil
  • 2 eggs
  • 1 tsp. vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp. salt
  • 4 tsp. ground cinnamon
  • 1 ½ tsp. ground ginger
  • 1 ½ tsp. ground cloves

Directions:

  1. Combine pumpkin puree, brown sugar and oil. Add the eggs, beating well.
  2. In separate bowl, combine all dry ingredients then sift.
  3. Mix dry ingredients into wet ingredients.
  4. Scoop ¼ cup sized mounds onto greased cookie sheets 3 inches apart.
  5. Bake for 12-14 minutes at 350 F.
  6. Let cool then sandwich with your favorite buttercream.
