Monte Cristo With French Toast Gelato

Serves 4

Ingredients:

  • 8 slices 1/2 " thick pullman loaf/pain de mie or brioche or just white bread
  • 8 slices bacon
  • Cheese mix below
  • 4 TB. Butter
  • Beer Batter below
  • Vanilla Ice Cream/We make French Toast Gelato at the restaurant

CHEESE MIX FOR MONTE CHRISTO


Ingredients:

  • 2 oz. Fontina cheese
  • 2 oz. Cream cheese, room temperature
  • 2 oz. ricotta cheese
  • 1 oz. pecorino or parmesan cheese, grated
  • 1 EA. Egg yolk
  • pinch nutmeg
  • pinch black pepper
  • Pinch salt

Directions:

  1. Put all in robot coup and pulse until creamy
  2. Build Monte Christo sandwiches with 3 half slices of rendered bacon.
  3. Griddle the sandwiches like grilled cheese sandwich and cool before dipping in the beer batter to fry.

 

BEER BATTER FOR MONTE CHRISTO:


Ingredients:

  • 5 oz. all pourpose flour
  • 5 oz. cornstarch
  • 1/4 tsp. salt
  • 1 tsp. baking powder
  • 1 C. beer
  • 1 ea. egg


Directions:
• WHISK ALL TOGETHER UNTIL SMOOTH.

  1. Cut the grilled sandwiches in half and place a skewer through.
  2. Dip in the beer batter and fry in a pot of canola oil or fryer at 350 F. for about 3-4 minutes.
  3. Drizzle with bourbon maple syrup, serve with red fruits jam and dust with powdered sugar and finish with a scoop of vanilla or French Toast gelato!
