Mexican Chicken Grilled Cheese

Ingredients:

  • 1 tbsp of butter
  • 8 slices of cornbread, sliced thick
  • 1/2 cup of prepared guacamole
  • 4 slices of cheddar
  • 4 oz of cooked and shredded chicken breast
  • 1/4 cup of smooth (not chunky) salsa

Directions:

  1. Heat butter in a skillet on medium heat
  2. Lay out 4 slices of the bread and spread each one with 1 tbsp of guacamole. Top guacamole with 1 slice of cheddar
  3. Place 1 oz of chicken on each sandwich and top chicken with 1 tbsp of salsa
  4. Top with additional slice of bread and cook in the heated pan until the cheese is melted and the bread is browned
