Lemon Meringue Pie in a Glass

Step 1: Lemon Curd
  • 5 oz. Freshly Squeezed Lemon Juice
  • 3/4 Cup of Sugar
  • 3 Large Eggs plus One Yolk
  • Put in Glass Heat Proof Bowl Over Double Boiler (Do not use aluminum or Stainless Steel)
  • Whisk Constantly for about 5 minutes
  • It is done when it folds over itself and takes shape
  • Whisk in half pound or two sticks of Unsalted Butter
  • Chill for 3 Hours
Step 2: Crust
  • Turn into a Crumble
  • 4 oz. Graham Cracker Crumbs
  • 2 oz. All Purpose Flour
  • 2 oz. Regular Granulated Sugar
  • 4 oz. Unsalted Butter
  • Mix Everything Together
  • Place on Parchment Lined Baking Sheet
  • Put in 350 Degree Oven for 10 Minutes
  • Give it a Stir leave in 5 More Minutes
Step 3: Meringue
  • 4 Large Egg Whites (no yolks)
  • 3/4 Cup Granulated Sugar
  • Add Half Vanilla Bean (Sub. Vanilla Extract)
  • Whisk together with a pinch of salt
  • Put in Double Boiler till Sugar dissolves
  • Pour into Stand Mixer Bowl
  • Blend/Whisk till Cool
Step 4: Layering in a Glass
  • 2 Tablespoons of Crumble
  • Lemon Curd use Piping bag or Sandwich Bag cut at corner
  • More Crumble
  • Add Meringue
  • Optional Carmelize Top with Kitchen Torch
