Lager-Cheddar Soup

yields 1 gallon of soup
Ingredients
  • 1 bulb Garlic, roasted
  • ¼ lb. Butterc
  • 1 ea. Sweet onion, diced
  • 1 ea. Red bell pepper, diced
  • 1 ea. Carrot peeled and diced
  • 2 ea. Shallots thinly sliced
  • 2 qts. Vegetable stock
  • 22 oz. Lager
  • 3 ea. Yukon Gold potatoes, diced
  • 2 ea. Sweet potato, diced
  • 1 qt. Heavy cream
  • 2 Lbs. Sharp Vermont or NY White Cheddar, Salt and Pepper to taste
Instructions
  1. Pre-heat oven to 350 degrees.
  2. Wrap garlic in foil and roast for about 20 minutes.
  3. Sweat the shallots, peppers and carrots until soft.
  4. Add the beer and reduce down slightly (simmer for 5 minutes).
  5. Add the onions, potatoes and stock.
  6. Cook until the potatoes are tender.
  7. Turn off the heat, add cheese, roasted garlic and heavy cream.
  8. Puree in blender until smooth.
  9. Season to taste with salt and pepper.
