Two Servings
Ingredients:
  • Fresh fava beans- @ 4 – 5 ounces
  • Shrimp 14 – 15 (41-50’s) depending on size
  • Frisee 1- 2 bunches
  • Crisp pancetta – @ 4 ounces
  • Salted ricotta - ounces
  • Tomato – 1 -2 plum tomatoes
  • Lemon dressing- 1 lemon, e.v.o.o salt & pepper

Directions:

  1. Blanch the Fava beens for @ 3 minutes. Remove from water and shock with ice water bath to retain vibrant color.
  2. Blanch tomato(es). After blanching remove skin and seeds and cut into dice.
  3. Clean shrimp of shell and vein and boil @ 2- 3 minutes depending on quantity. Cook until tender. Shock after cooking. Can use same pot if you like. Cook Fava beans first, tomatoes, then shrimp
  4. Sautee pancetta until crispy, remove from pan and place on paper towel to drain excess oil.
  5. Juice the lemon, add extra virgin olive oil ( 6 oz or to taste), salt & pepper to taste
  6. Combine all ingredients, plate and then top with salted ricotta
