Hummus Veggie Wrap

Ingredients:

  • 3 cans of wild salmon
  • 3 tablespoons of capers
  • 1 red onion chopped
  • Juice from 2 lemons
  • 1 pound of asparagus
  • 6 cups of spinach
  • 1 tablespoons of olive oil
  • Salt and pepper to taste

Directions:

  1. Brush asparagus with olive oil; sprinkle salt and pepper.
  2. Grill for 3 minutes on each side.
  3. Mix salmon, capers, onion and lemon juice in bowl.
  4. Divide asparagus, spinach and salmon salad on 4 plates.
