Hot Chocolate

Ingredients
  • 2 cups milk
  • 1/2 cups heavy cream
  • 3/4 cup 80% Valrhona chocolate
  • 3/4 cup 58% chocolate
Method
  1. Combine chocolates together. Place over a double broiler. Melt.
  2. Combine milk and cream and scald (bring to a full boil).
  3. Combine chocolates with milk mixture together with an immersion blender. Pour into mugs, and serve with spiced marshmallows.
