Grilled Summer Squash and Zucchini

A simple side dish featuring bright and colorful summer vegetables.

Serves 2
Ingredients:
  • 1 Summer Squash, cut on the bias into ¾ inch rings
  • 1 Zucchini, cut on the bias into ¾ inch rings
  • Extra Virgin Olive Oil
  • Kosher Salt
  • Fresh Cracked Pepper

Directions:

  1. Prepare grill or grill pan over medium high heat. 

  2. Coat vegetables in olive oil and season liberally with kosher salt and fresh cracked pepper. 

  3. Grill vegetables over direct heat for 1 – 2 minutes on each side, or until slightly charred and just tender. 

  4. Remove from heat.  Serve. 

  5. If serving chilled, all the vegetables to cool to room temperature before packing and refrigerating.
