Grilled Skuna Bay Salmon with Quinoa and Kale

Ingredients:
  • 1lb salmon filet
  • 1 cup quinoa
  • 1 small onion
  • 2 cups chopped well washed kale
  • 32 ounces organic vegetables stock
  • 1 lemon
  • Salt a pepper to taste
  • 1 table extra virgin olive oil
Directions:
  1. First you’re going to make your quinoa like risotto.
  2. So chop your onion and get a sauté hot with extra virgin olive oil.
  3. Once hot, add your chopped onion.
  4. Sweat the onion for about a minute.
  5. Then add your quinoa.
  6. You are going to want to toast the quinoa.
  7. Then start to add your stock.
  8. Always stir with a wooden spoon. 
  9. Repeat this process until you used all of the stock.
  10. Then fold in your kale.
  11. Then grill your salmon or poach your salmon.
