Grilled Cilantro Shrimp Tacos

Ingredients:

  • 1 pound medium shrimp, peeled, cleaned, tails off
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon smoked Spanish paprika
  • 1 teaspoon ground black pepper
  • ½ teaspoon ground cumin
  • 1 teaspoon kosher salt

Cilantro Salsa

  • 1 bunch cilantro, cleaned and ends trimmed off, finely minced
  • ½ white onion, finely minced
  • 1 large lime, juiced
  • 3 tablespoons olive oil
  • kosher salt and black pepper

 

  • Soft corn tortillas, slightly warmed
  • Plain Greek yogurt and limes for serving

Directions:

  1. In a large bowl, combine the shrimp, olive oil, paprika, black pepper, cumin, and salt. Toss to combine and let marinate 5 minutes.
  2. In a separate bowl, toss together the cilantro, white onion, lime juice, and olive oil. Season to taste with salt and black pepper, and set aside
  3. Preheat a grill pan or iron skillet and cook the shrimp about 2 minutes per side or until cooked and slightly charred. This can also be done on an outdoor grill by skewering the shrimp.
  4. Once shrimp are cooked, spread the warm tortillas with a bit of yogurt and top with shrimp and the cilantro salsa. Serve with lime wedges on the side.
