Glazed Roasted Bananas

Serves 8 - 1/2 banana & 1/4 cup frozen yogurt per person 

Ingredients:

  • 1/4 cup brown sugar
  • 1/4 cup fresh lemon juice
  • 1 tablespoon peanut oil
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon dried ginger
  • 1/4 teaspoon nutmeg
  • 4 large firm, ripe DOLE® bananas; peeled & cut in half lengthwise
  • 1/4 cup chopped almonds, toasted
  • 1/2 cup unsweetened coconut, shredded & toasted
  • 2 cups low fat vanilla frozen yogurt

Directions:

  1. Preheat oven to 450°.
  2. Combine first 4 ingredients in a bowl and set aside
  3. Place banana halves, cut side up, on a pan coated with cooking spray
  4. Bake for 4 minutes.
  5. Drizzle sugar mixture evenly over banana halves, and sprinkle with toasted almonds & coconut.
  6. Bake an additional 3 minutes.
  7. Cut each banana piece into thirds crosswise.
  8. Serve bananas with frozen yogurt; drizzled with any remaining sugar mixture.
