Gazpacho Soup

Item/Amount

  • Green Chili 1 cup
  • Worcestershire 2.5 tbs
  • Olive Oil 1 tbs
  • Veggie Stock 1 cup
  • Garlic 1 clove minced
  • Diced White Onions 1 cup

  • Brown Sugar 1 tbs
  • Black Pepper .5 tsp
  • Ground Corriander .5 tsp
  • Cumin .5 tbs
  • Ground Red Pepper .25 tsp

Item/Amount

  • Tomato Juice 2 46 oz. cans
  • Tomato 1 medium diced
  • Cucumber 1 large peeled and diced
  • Green Pepper 1 large de-seed and diced
  • Cilantro 1/4 cup. fresh and chopped
  • Scallions 3/4 cup chopped
  • Corn 2 cups
  • Lime 2 zest and juice

Directions:

1.  Add the Green Chilies, Worcestershire, Olive Oil, Veggie Stock, Garlic and Diced White Onion into a Food Processor along with the spices

2.  Mix all ingredients in the food processor well

3.  Transfer to a large bowl and stir in the remaining ingredients

4.  Chill Well, Serve Cold
