Garlic Shrimp With Mixed Greens And Lemon Dill Vinaigrette

Ingredients:

  • 1 Pound of fresh peeled and cleaned medium shrimp
  • 10 cloves of garlic
  • 1 clove of smashed garlic
  • Canola oil
  • 1 tbsp extra virgin olive oil
  • course salt
  • black pepper

For The Salad:

  • 6 oz Baby arugula shoots
  • 6 oz frisee, chopped
  • 1 tbsp dijon mustard
  • fresh dill
  • 2 lemons
  • 1 tbsp honey
  • 1 tbsp balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • course salt
  • black pepper

Directions:

  1. Saute shrimp in canola oil
  2. When slightly cooked, add 10 cloves of finely chopped garlic, and a spoon of olive oil
  3. Prep greens
  4. Whisk mustard, lemon juice, honey, vinegar and dill.
  5. Toss greens with dressing.
  6. Season with salt and pepper.
  7. Plate garlic shrimp on top of mixed greens
