Garden Green Salad

Serves 4-6
Ingredients For The Dressing:
  • 1/2 lemon, juiced
  • 1 tablespoon red wine vinegar
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 1 tablespoon anchovy paste
  • 2 medium garlic cloves, minced
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil


Ingredients For The Salad:

  • 2 heads romaine lettuce, chilled and sliced
  • 2 celery ribs; sliced
  • 3 green onions, sliced
  • handful of fresh mint sprigs; finely chopped
  • 1 avocado; pitted and sliced in 1/2 inch wedges
  • 2 tablespoons grated Parmigiano Reggiano cheese
     

Directions:

  1. Combine all ingredients for dressing in a bowl and whisk well. Set aside.
  2. Toss lettuce, celery, green onions, 1/2 of the cheese and 1/2 of the chopped mint in a large serving bowl. Drizzle one half of dressing over salad and re toss.
  3. Top with avocado wedges and remaining cheese. Drizzle remaining dressing on top and sprinkle with remaining mint and cheese.
  4. Enjoy!
