Frozen Yogurt Banana Split

Ingredients:

  • 1 pint frozen yogurt such as Il Laboratorio del Gelato Yogurt Gelato
  • 4 bananas – slightly under ripe is best
  • 2 tablespoons sugar in the raw
  • 8 brownies cut into 1 inch squares
  • ½ cup strawberry rhubarb jam
  • 2 cups of heavy cream – whipped to soft peaks
  • ¼ cup chopped peanuts 

 

For the strawberry magic shell

  • 2 tablespoons freeze dried strawberries ground into a fine powder
  • ½ cup melted white chocolate  such as Valrhona Iviore
  • 2 tablespoon vegetable oil

Mix all ingredients together .

Directions:

 

  1. Spoon ¼ cup of whipped cream into the bottom of an ice cream dish.
  2. Press in 2 brownie squares and spoon a little jam on top.
  3. Cut the bananas into ½ inch coins and top with the sugar in the raw.
  4. Brulee with a kitchen torch or place under a broiler.
  5. Arrange the bananas on top of the contents of the glass.
  6. Place a large scoop of ice cream on top of the bananas and pour the magic shell on top.
  7. Sprinkle with the chopped peanuts.
  8. Alternate plating.
  9. Grill the bananas whole with the skins on until the outside is charred. Slice the bananas in half lengthwise.
  10. Top each half with brownies, jam and dollops of whipped cream.
  11. Scoop frozen yogurt on top and top with magic shell and chopped peanuts.
