Fresh Seasonal Fruit Trifle

Use what’s fresh and you can’t go wrong with this beautiful dessert!

Makes 6 individual servings made in 10-ounce glasses.

Prep time 15 minutes
Total time 1 hour 15 minutes (1 hour up to 24 hours to chill)

Ingredients:

  • 1 pound of fresh fruit, sliced peaches, nectarines or berries, combine with 2 tablespoons sugar and juice of one lemon.
  • 8 tablespoons light or dark rum or apple juice
  • 3 cups pound cake, cut in 1” cubes (about 9 ounces)
  • ¼ cup fresh mint, thinly sliced
  • ½ cup sugared almonds or substitute your favorite
  • 3 cups whipped cream
  • 1 cup Melba Sauce (recipe follows)

Melba Sauce

  • Combine 1 cup fresh raspberries, ¼ cup raspberry jam and juice of ½ lemon in a blender. Puree until smooth.

Directions: 

  1. Use whatever glasses you have, but be sure they’re clear-that way, you’ll be able to show off the layers.
  2. Layer the components two times in each glass in the order above.(Except the mint and almonds) When assembling, don’t pack layers down too much- having spaces will allow the ingredients to flow into one another, helping blend the flavors.
  3. Cover the trifles and chill at least 1 hour and up to 24 hours.
  4. Garnish with sugared almonds and mint just before serving.
