Fish Tacos

Ingredients
  • 1 pound of white fish fillets
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 lemon cut in half
  • 1 head of cabbage, finely chopped
  • 2 dill pickles - chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons hot sauce
  • 1 12-ounce can of refried beans
  • 4 corn tortillas
Method
  1. Rinse the fish fillets in cold water and pat dry. Rub the oil on both sides.
  2. Season the fillets with salt and pepper on both sides.
  3. Grill the fillets for about 5 minutes in each side or until crispy and flaky.
  4. Squeeze the juice from the lemon on the fillets while they are grilling.
  5. In the meantime, heat the refried beans on the stove or in the microwave.
  6. Remove the cooked fillets from the grill and cut them into 1/2 ?inch strips.
  7. Chop the cabbage and put in a mixing bowl. Add the mayonnaise and hot pepper sauce to the cabbage, along with the chopped pickles. Mix together.
  8. Warm the tortillas on the grill.
  9. On each tortilla, spread a spoonful of beans, and then add several strips of fish, and top with the cabbage blend.
