Filet Mignons with Dark Chocolate Demi-Glaze, White Chocolate Mashed potatoes, and Green Beans Almondine

Ingredients:

Filet Mignon with Dark Chocolate Demi-glaze with Green Beans Almondine

  • 6 oz. filet mignon
  • 4 oz. espagnole sauce
  • 4 oz. veal stock
  • 2 oz. dark chocolate
  • 4 oz. green beans
  • 1 oz. almonds
  • 2 T butter
  • 3 T salt
  • 1 T black pepper

Directions:

  1. Season the filet with 1 T salt and 1 T black pepper.
  2. Place on grill and sear for six minutes on side one and four minutes on side 2 for a medium rare filet.
  3. Place espagnole sauce, veal stock, and 1T salt in a pot and simmer until reduced by two thirds.
  4. Turn off the heat and place 2 oz. dark chocolate into the pot and stir until homogenous mixture has formed.
  5. Blanche green beans in simmered water for two minutes.
  6. In a separate sauce pan, place 2 T butter, 4 oz. green beans, and 1 T salt.
  7. Sauté for 4 minutes until the almonds have toasted and the green beans are cooked through.

Ingredients:

White Chocolate Mashed Potatoes

  • 1 russet potato
  • 1/2 cup heavy cream
  • 1 tsp. chopped garlic
  • 1 T salt
  • 2 oz. white chocolate
  • 2 T butter(unsalted)

Directions:

  1. Blanche the potato in boiling water until fork tender.
  2. Peel potato skin and chop into cubes.
  3. In a sauté pan place chopped garlic and 2 T butter on medium heat for two minutes.
  4. Add heavy cream, white chocolate, and one chopped potato.
  5. Bring to a boil and combine the potato with heavy cream using a spatula.
  6. Place white chocolate potato in the center of the plate, green beans almondine on-top, and sliced filet mignon along the side. Place dark chocolate demi-glaze around the side of the filet and serve.
