Farro and Pomegranate Arugula Salad with Spiced Walnuts

Ingredients:
  • 3 Cups Farro
  • Salt to Taste
  • Pepper to Taste (freshly ground)
  • 1 Tablespoon Pomegranate Molasses
  • 2 Tablespoons Maple Syrup
  • 1/2 Cup Extra Virgin Olive Oil
  • 2 Tablespoons Sherry Vinegar
  • 1/4 Cup Chopped Walnuts
  • 1/8 Cup Pomegranate Seeds
  • 1 Sprig Fresh Tarragon, chopped
  • 1 Sprig Fresh Chevril, chopped
  • 2 Tablespoons Chopped Fresh Chives
  • 4 Cups Arugula
  • 1/4 of a Lemon
  • 2 Tablespoons Chopped Fresh Chives
Directions:
  1. Cook farro according to package instructions. Remove from water, set aside to cool.
  2. To make the vinaigrette: in a mixing bowl, combine pomegranate molasses, maple syrup, sherry vinegar. Whisk in olive oil.
  3. Toss remaining ingredients in a bowl, dress with vinaigrette. Season with salt and pepper. Pour over cooked farro. Set aside to let mixture soak into farro.
  4. Place arugula in mixing bowl. Dress with lemon juice, olive oil, salt and pepper.
  5. Spoon farro onto plate, flatten. Place arugula on top.
