Quick, Easy and Healthy Fried Rice

Ingredients
  • big container organic baby spinach (pre-washed)
  • 3 cups cooked rice (any kind will do, brown, white or sushi)
  • 1 pint container of egg whites
  • low sodium soy sauce or
  • tamari as needed
Directions
  1. Butter flavored spray/ canola oil spray
  2. Liberally spray large fry pan with oil spray
  3. Fry up the eggwhites- till set.
  4. Add the spinach and stir till it wilts down (a huge pack ends up not so much cooked)
  5. Add the rice to the whole mixture and as much soy sauce as you like.
  6. Portion into 4 bowls.
