Crunchy Chickpea Munchies

No meat, no fish, no dairy, no eggs
Makes 4 servings

Ingredients:

  • 1 12 ounce can of chickpeas, drained
  • 2 tablespoons olive oil
  • Spices to taste: My favorites are smoked chipotle and pimenton, but you can try anything—garlic and onion powders, even sweet spices like cinnamon and nutmeg.
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 475. Pat chickpeas dry with paper towels.
  2. Toss with olive oil, spices, salt, and pepper. Spread onto cookie sheet and bake until browned and crispy, tossing every 5-10 minutes, for about 30 minutes.
