Cranberry Salsa

Ingredients:

  • 1 pound fresh cranberries
  • 1 can mandarin oranges
  • zest of one large orange
  • ¼ cup of sugar
  • pinch of salt

Directions:

  1. Pulse cranberries in a food processor until they are the size of a grain of rice.
  2. Remove the zest from the orange with a microplane.
  3. Add sugar and salt
  4. Refrigerate at least two hours; best if macerated overnight.
