Confit Duck Taco

Ingredients:

  • 6 oz duck, roasted or peking
  • 1 clove of garlic, minced
  • 1 ea shallot, minced
  • ¼ bunch parsley, chopped
  • 6 ea wonton wrappers, ring mold into smaller bite size rings
  • 4 oz greek yoghurt
  • 2 oz golden raisins
  • ¼ bunch cilantro, chopped
  • 1 tsp ground cumin
  • TT salt and pepper

Directions:

  1. Sauté duck in its own fat. Add garlic, half of the shallots, and parsley.
  2. Fry mini wonton taco shells, and place duck inside taco shell.
  3. Mix golden raisins, shallots, cilantro, yoghurt, ground cumin, salt, and pepper together and use as garnishing sauce.
