Chopped Taco Salad

Ingredients:
  • 8 oz chicken breast
  • 2 tbsp olive oil
  • 2 tbsp minced garlic
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1/2 head of lettuce
  • ¼ cup chopped tomatoes
  • ¼ cup red onion chopped
  • ¼ cup shredded Monterey Jack cheese
  • ¼ cup avocado- chopped
  • ¼ cup whole black beans
  • Vinagrette or Ranch Dressing
Directions:
  1. Marinate the chicken with olive oil, garlic, salt and pepper. Let marinate in refrigerator for 20min.
  2. Cook chicken on a grill or grill pan for 3 min each side. Juice will run clear once chicken is done.
  3. Dice the chicken into medium pieces.
  4. Place lettuce in a bowl and top with the tomatoes, onions, black bean, avocado, cheese and chicken.
  5. Lastly, add your favorite dressing and toss.
