Chia Pudding

Makes 1 Serving

Ingredients:

  • 1/2 cup vanilla coconut milk
  • 2 Tablespoons chia seeds
  • 1 teaspoon maple syrup
  • 1 pinch salt

Directions:

  1. Mix ingredients together in a small bowl. Whisk once every 5 minutes for 15 minutes so seeds begin to absorb liquid evenly. C
  2. over and refrigerate overnight, or at least 5 hours. Serve plain or with fruit.

Per serving:  236 calories, 11g fiber, 5 g protein, 2.4 g iron, 1.3 g zinc, 349 mg calcium, 0 mcg vitamin B12, 2 IU vitamin D, .3 g choline, 5.05 g omega 3s
