Ceviche Del Mar

Ingredients
  • 1-2 Lbs Fish, Diced Medium, Blood Line Removed
  • 1 Cup Red Bell Pepper, Diced Small
  • 1 Cup Yellow Bell Peppers, Diced Small
  • ½ Cup Red Onion, Diced Small
  • 2 Tbsp Ginger, Minced, Squeezed Out Juice
  • ½ Cup Cilantro, Chopped
  • ¾ Cup Fresh Lime Juice
  • ½ Cup Orange Juice
  • ½ Cup Cucumbers (Diced)
  • ½ Cup Tomatoes (Diced)
  • 1 Tbsp Kosher Salt
  • 1 Tsp Ground Black Pepper
  • 1 Scotch Bonnet, Stemmed, Seeded And Minced
  • ¼ Cup Parsley, Chopped
Method
  1. When fish has been cleaned and cut place in a  bowl and pour ¾ lime juice over it
  2. Sprinkle with salt and let stand for 30 minutes then strain off milky liquid
  3. Combine all other ingredients in a mixing bowl and toss in the bowl with the fish
  4. Readjust seasoning if necessary
  5. Quantity of lime juice may vary slightly
  6. Use fresh fish from fish market not grocery store 

Serves 8.
