Cauliflower Gratin

Ingredients
  • 1 head of cauliflower, sliced 1 inch thick
  • 1c heavy cream
  • ½ c skim milk
  • 5 oz Swiss cheese, diced small
  • 1/4c Parmesan cheese grated
  • 1t fresh thyme chopped
  • S and P

Method:

  1. Preheat oven to 375 degrees.
  2. Place sliced cauliflower in a glass-baking pan.
  3. Combine cream skim milk and cheeses.
  4. Season with salt and pepper.
  5. Mix well and pour over cauliflower. Bake in oven for approximately 35- 40 minutes.
