Caribbean Pineapple Shrimp Skewers

Makes about 6 skewers
Ingredients:
  • 1 tablespoon paprika
  • 2 teaspoons curry powder
  • 2 teaspoons ground cumin
  • 1 1/2 teaspoons ground allspice
  • 1 teaspoon ground ginger
  • 1 teaspoon ground coriander
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/8 teaspoon ground red pepper
  • 2 pounds unpeeled jumbo shrimp (16-20 count), peeled and deveined
  • Non-stick cooking spray
  • 1 Pineapple, peeled, cored and cut in thick chunks
Directions:
  1. Pre-heat grill on high.
  2. Combine first 10 ingredients in a small bowl and mix in shrimp.
  3. Skewer shrimp and one pineapple alternatively on skewers. Brush with oil or spray with non-stick cooking oil and place on hot grill. Cook for 2-3 minutes on each side until pink.
  4. Serve immediately.
